Ingredients:

  • 1/2 KG Egg Plant
  • 1 Onion Paste
  • 1/2 TBS Poppy Seeds
  • 1/2 TBS Mustard Seeds
  • 50 GM Peanuts
  • 1/2 TBS Turmeric Powder
  • 250 Gms Yogurt
  • 1 tsp Red Chili Powder
  • Salt to Taste
  • 1/2 Cup Water
  • 4 TBS Oil

Preparation:

  1. Roast poppy seeds, mustard seeds and peanuts and ground them into a fine
    paste
  2. Add the spices paste, onion paste, turmeric, red chili powder, salt,
    water and oil in a microwave safe bowl and cook for 8 minutes on 100%
  3. Add yoghurt and sliced egg plants and cook on high for 10 minutes
  4. Stir once and cook for another 10 minutes
  5. Garnish with fresh coriander and serve
