Ingredients:
- 1/2 KG Egg Plant
- 1 Onion Paste
- 1/2 TBS Poppy Seeds
- 1/2 TBS Mustard Seeds
- 50 GM Peanuts
- 1/2 TBS Turmeric Powder
- 250 Gms Yogurt
- 1 tsp Red Chili Powder
- Salt to Taste
- 1/2 Cup Water
- 4 TBS Oil
Preparation:
- Roast poppy seeds, mustard seeds and peanuts and ground them into a fine
paste - Add the spices paste, onion paste, turmeric, red chili powder, salt,
water and oil in a microwave safe bowl and cook for 8 minutes on 100% - Add yoghurt and sliced egg plants and cook on high for 10 minutes
- Stir once and cook for another 10 minutes
- Garnish with fresh coriander and serve
