Hawaiian Grilled Teriyaki Chicken Recipe
Ingredients:
– 1 1/2 lbs boneless, skinless chicken thighs
– 1 cup soy sauce
– 1 cup packed brown sugar
– 1 cup pineapple juice
– 4 cloves garlic, chopped
– 1 tbsp minced fresh ginger
Instructions:
1. Place the boneless, skinless chicken thighs in a bowl or a gallon-sized Ziploc bag. Set aside.
2. In a medium-sized mixing bowl, combine soy sauce, packed brown sugar, pineapple juice, chopped garlic, and minced fresh ginger. Stir until the brown sugar dissolves completely, creating a flavorful teriyaki marinade.
3. Pour the pineapple-infused marinade over the chicken thighs, pressing the air out of the bag before sealing it tightly, or cover the bowl securely to minimize air exposure.
4. Refrigerate the chicken thighs in the teriyaki marinade overnight, or for at least 4 hours, allowing the flavors to meld.
5. Remove the chicken from the marinade, setting it aside. Do not discard the marinade; you will need it for later.
6. In a medium saucepan, bring the leftover marinade to a simmer over medium heat. Cook for 5-10 minutes until slightly thickened and flavorful.
7. Grill the marinated chicken thighs, occasionally brushing with the hot teriyaki marinade. Ensure not to reuse the brush on the marinade after it has touched the raw chicken.
8. Continue grilling the chicken until it reaches an internal temperature of 165°F.
9. Transfer the grilled chicken to a baking dish and pour the remaining hot teriyaki marinade over the top. Serve immediately for a delicious Hawaiian-inspired meal.
