    Slow Cooker One-Pot Chicken Burrito Filling Recipe

    If you’re searching for a delicious, family-friendly dinner idea, this Slow Cooker One-Pot Chicken Burrito Filling is perfect!     Ingredients:

    1 cup sweet onion (diced)

    1 green bell pepper (diced)

    15 oz pinto beans (drained and rinsed)

    2 tbsp cilantro (chopped)

    1/2 tsp salt

    1/4 tsp pepper

    2 tsp chili powder

    1/4 tsp cumin

    16 oz salsa

    1 1/2 – 2 lbs boneless skinless chicken breasts

    1 1/2 cups Minute rice (uncooked; add at the end)

    Tortillas (for serving)

    Cheese, sour cream, and extra salsa (for topping)

    Instructions:

    1. Prep the slow cooker: Add diced onion, green bell pepper, pinto beans, chopped cilantro, salt, pepper, chili powder, cumin, and salsa to your slow cooker. Mix everything together thoroughly.

    2. Add the chicken: Place the boneless, skinless chicken breasts on top of the mixture. Do not add rice yet.

    3. Cook low and slow: Cover and cook on LOW for 6 hours. Avoid opening the lid during this time to keep the heat consistent.

    4. Shred the chicken: After 6 hours, use two forks to shred the tender chicken directly in the slow cooker.

    5. Add rice: Stir in the uncooked Minute® rice and mix it evenly into the filling.

    6. Finish cooking: Switch the slow cooker to HIGH and replace the lid. Cook for an additional 20 minutes, allowing the rice to absorb the flavors and soften (see notes for tips).

    7. Serve and enjoy: Spoon the filling onto warm tortillas and top with shredded cheese, sour cream, and extra salsa for a mouthwatering meal.

     

     

    Notes:

    Perfect for meal prep: Store leftover burrito filling in an airtight container for up to 3 days or freeze for up to 3 months.
